Pinneapple Upside Down Biscuits

     This is a recipe from the lovely Paula Dean that she had on her show a long, long time ago.  She has been diagnosed with Diabetes.  One of the biggest reasons I want to get into shape is because of Diabetes.  I do not have it yet, but I know for sure at this rate I will end up with it.  About 7-8 years ago when I was tested, I was at the same weight I am right now.  220 pounds.  I was also this weight 10 years ago when I graduated high school.  Okay, back to the point.  When I was tested, I was told I was dangerously close to being Diabetic.  At that time, I changed my diet.  I worked out a little and lost 60 pounds.  Yay for me, until I started working a traveling job and ate out more, became addicted to pop again and this is the reason why I have gained it back in the past 5 years.  Thankfully, it didn't happen all at once.  I would like to post recipes from time to time whether they are my own or someone else's.
     The thing we all need to realize is that we do need fat's in our diet.  We need to use them in moderation.  So please, do not eat all of this in one sitting.  As for me, I do plan on starting to work out again.  I do plan on starting to run again once the wonderful winter is over.  I was proud of my achievement of running over a mile.  It's the little things in life that makes us happy... right?  I hope this recipe can make you as happy as it made me!  :)

Pineapple Upside Down Biscuits

Ingredients

  • 1 (10-ounce) can crushed pineapple
  • 1/2 cup packed light brown sugar
  • 1/4 cup (1/2 stick butter), at room temperature
  • 10 maraschino cherries
  • 1 (12-ounce) package refrigerated buttermilk biscuits (10 count)

Directions

Preheat the oven to 400 degrees F.
Grease 10 cups of a muffin tin. Strain the can of crushed pineapple, save juice for later.
Combine the pineapple, sugar, and butter, and mix well. Divide thepineapple mixture among the muffin cups. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit. Bake for 12 to 15 minutes, or until golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

How can I work out?

With the holiday's coming, I want to start working out again.  With the show almost over, I will no longer be able to consider the show as a "work out".  I am considering going to get a monthly membership at Charter Fitness down the street from me.  I have tried working out at home, and I just can't find the motivation, while I have my mom in the other room smoking and talking on the phone.... or walking in to "see" how its going.  I have never bought a gym membership before.... any suggestions?  Any tips you suggest to keep me motivated if I do?  Nobody I know close by has a membership so its not like I can buddy up with them.  Please help!!!

Rain, Rain, Go Away, I Guess I Will Run Another Day!

Since the start of the blog, I have ran a total of 4 times!  Woot Woot! I keep wondering when I am going to get tired of this working out thing.  When will it get boring?  Honestly, I don't see an end in sight anytime soon.  I know your thinking "what?  He has done a total of 4 workouts!"  Seriously.  I am loving the running thing.

Day 2 of running-  Absolutely horrifying!  I was still a bit sore from the first workout, so I stretched more and we pushed ourselves.  Made it through okay!  Work kind of sucked on Thursday and by Friday I had absolutely no pain!  I could squat to pick something up with no issues!

I planned on running Friday, but this is what mother nature tortured me with:  4 inches of rain in a little over an hour! 


Had a kick a$$ July 4th Holiday weekend.  The best I had in years.  ooh wait.  I guess I can show a few pics!

OK.. totally not my yard.. but I am really really missing Jamaica right now that I saw it in my album!

Sunday, we went to a friends BBQ- The guy that also is the leader of the band that my man is in.
Tried uploading a pic of him singing, but that's not working so well.  Here is a pic of us at the camper!

Monday we went to a friends house and had a midday BBQ then I came home and napped, watched Macy's Fireworks and the crashed!

Tuesday July 5th-  We ran again.  We ran all the way through the Couch 2 5k program and walked back.  again.  I stretched like crazy afterwards.  Muscles were extremely sore during those.  If your new to this.  Trust me, for a fat kid needs to stretch! 

Do it, your chunky thighs and fat feet with thank you for it.  (mine even gave up retaining water... I think.)

Today- Surprisingly when I woke up, I was not sore!  When I realized this a few hours into doing a store reset (I do store resets, sales, merchandising for grocery stores as well as bake cakes on the side!) I was extremely excited!  This was a happy time for me.  I was blown away that after running 3 times, about 1.3 miles each time, I was not sore!  Can I get a Woot Woot!  again?  LOL

So after work, I needed to do emails, pack for a 1 day business trip to a store out by the camper.  We are staying overnight... or possibly until Saturday!  I had some laundry, prep dinner for after a run.  Once I got all this started it was time to head out to run.  I will say that today was the best running day so far.  It was quite warm, but by the time I took off, the sun was going down slightly and there was a lovely breeze to spread the stench of sweat to my loving neighbors along the bike path.  I really don't think I smelled, but I have been starting to sweat a bit less.  Don't worry, I have upped the water intake since last week, so I know I am not dehydrated.  Right now, I have been sitting at the desk for a while, just got up to use the bathroom and I am not hurting.  I must be doing something right.  For now.

I need to figure out how to take a camera with me on my run.  When the program tells me to walk, I can snap pics for you guys!  Or maybe I can buy a bike or borrow my brother's and I can ride to take pics.  I will work on this.  Give me time.

The Official Start

     Hope everyone is doing well!  I started the first run yesterday! :)  Go me!  Starting out I was nervous.  I have been a smoker for 10 years, and even when I was at the same weight as I was 10 yrs ago I still couldn't breath well after a few minutes of running.  We did our preliminary stretches and before we knew it, we were off and running.  Things went great the first 60 seconds or running, then we walked for 90.  We did this process until about minute 15 through the workout and then it happened!  My crackberry decided that it would malfunction and reset itself on me.  If any of you have ever had a blackberry, you know that the re-boot process is ridiculously long! (approx 10 minutes!  my desktop doesn't even take that long!) 
     So being the over-dramatic Hot Carl that I am, I freaked out.  Thankfully Karla had her cell phone inside her bra!  At least I think it was... I dunno.  You women and your hiding places for money, cell phones, keys, etc. baffle me at times.  Anyways... back to the story.  So she pulls out her phone, and she set a timer for 60 seconds.  She did not have a stopwatch on it, so we proceeded to run and walk another minute each and turned around.  We continued on all the way home walking a minute and running a minute!  I have a 16 mile bike path behind my house, so I didn't want to run too far then have something happen and have to walk or call mommy to come get me! 
     Thankfully we did turn around, because I almost died!  OKAY... not really, but it COULD have happened!  Not to far before we finished our run, there was a spot on the path that had been fixed up.  While we ran we tried to chat in between gasps of breath at the end and I did not see this spot, and ALMOST ended up in the bushes.  When we got back to my house, I did the cool-down stretches and proceeded to swear at myself in my head for going through with this!  Man, that sure hurt.  I did survive it tho!  Last night I slept good, after my mind stopped racing and thinking about life.
     This morning, it was a little rough getting out of bed, but after some wonderful coffee and some stretches I was ready for my day!  Despite walking a lot in my stores, I feel great!    Although I went to a funeral service today, I am in a good mood, is it possible to release so many endorphins that I am in a good mood??  Or, maybe it was from crying a lot at the wake?  I dunno... but I am ready to hit the path for day 2!  (technically it is day 1 according to the Blackberry!)  Oh... BTW I am using the app: Couch to 5k by Vimukti Technologies

Welcome my new followers! Couch to 5K soon to come!

     This is my first post.  I am in a hurry to pack for a business to Kansas City, clean my house and prep for a garage sale this weekend.  Next week I will be starting a new workout program that I downloaded on my crackberry.  This will "train" me to go from sitting on the couch with my muffin' top to running a 5k... and hopefully losing a few pounds of flour along the way. 
     I am excited, because I already have a few people that would love to be a guest blogger for me!  Thanks ladies!  This will encourage me to push myself and make this happen and hopefully having you two as followers to the blog, will keep me accountable! 
     I will work on getting the page filled out and get things moving along to prepare me on starting a blog!  Any suggestions, comment, concerns please let me know!  I am a Blirgin! (word I made up... BLOG VIRGIN!)  Please feel free to same I'm lame at any time!
